Stuffed Peppers

This is a sweet and savory dish that can be dehydrated to warm it and intensify the flavors.

3 tablespoons (45 ml) balsamic vinegar

3 tablespoons (45 ml) agave

3 tablespoons (45 ml) olive oil

1 teaspoon fresh garlic, minced

1/2 teaspoon salt

1/2 teaspoon black pepper

10 ounces (280 g) sliced button mushrooms

1 cup (175 g) chopped mango

1/4 cup (40 g) chopped red onion

2 red peppers, halved and seeded

Red-pepper flakes, to taste

In a medium bowl, whisk together the vinegar, agave, oil, garlic, salt, and pepper. Stir in the mushrooms, mango, and onion. Spoon into the red pepper halves and sprinkle a little bit of red-pepper flakes on top.

Dehydrator option: To intensify the flavors and warm the meal, place the stuffed peppers in a 118°F (48°C) dehydrator for an hour or two before serving.

YIELD: 4 STUFFED PEPPER HALVES
